FUNCTIONCatalyzes a C-S bond cleavage, converting hercynylcysteine sulfoxide to 2-sulfenohercynine, a sulfenic acid intermediate that can be spontaneously reduced to ergothioneine. Ergothioneine is a secreted antioxidant that protects from oxidative stress.
